Oh dear. Carrot cake will poison you all. I love carrots. I even like carrot juice. And cream cheese frosting. But carrot cake? :smt078

My recipe is pretty much like bethy's. The only difference is that I've found that the cake turns out lighter if I follow the dry and wet ingredient instructions minus the eggs, then mix them in one at a time just before adding the carrots. I have no idea why that works; it just does.

I don't like carrot cake. Those pictures were vomit-inducing.


I do however like zucchini bread, with the chunks of zucchini in it. I think Im not the biggest fan of the cream cheese frosting maybe.

Actually it was carrot and orange cake, but that's the kind of guy I am. I live on the edge 8)

after reading the word carrot over and over... I kept thinking it was spelled wrong...

but, I too love carrot cake, I like to get my vegetables in cake/ cupcake form... the way God intended me to :)
