Oh dear. Carrot cake will poison you all. I love carrots. I even like carrot juice. And cream cheese frosting. But carrot cake?

My recipe is pretty much like bethy's. The only difference is that I've found that the cake turns out lighter if I follow the dry and wet ingredient instructions minus the eggs, then mix them in one at a time just before adding the carrots. I have no idea why that works; it just does.

I don't like carrot cake. Those pictures were vomit-inducing.

I do however like zucchini bread, with the chunks of zucchini in it. I think Im not the biggest fan of the cream cheese frosting maybe.

Actually it was carrot and orange cake, but that's the kind of guy I am. I live on the edge

after reading the word carrot over and over... I kept thinking it was spelled wrong...

but, I too love carrot cake, I like to get my vegetables in cake/ cupcake form... the way God intended me to
